Cream Cheese Scrambled Eggs
Heat frying pan on low heat , add enough olive oil to thinly coat bottom of pan,
add 4 beaten eggs,
2 slices cooked and crumbled bacon
¼ cup diced green bell
¼ cup diced red bell pepper
1 Tablespoon diced green pepper
Dash salt and pepper
Dash Tabasco Sauce
Cook egg mixture until moisture is almost gone, then fold in half and place in a casserole dish.
¼ c. shredded Cheddar cheese
¼ cup softened cream cheese
¼ cup sour cream
Spread over egg mixture and bake at 350 degrees in oven till Cheddar cheese melts. Serve with cooked blueberries or strawberries spooned over the finished eggs and a serving of toast. Serves two.

Though the egg yolk is high in cholesterol the American Heart Association recommends that keeping cholesterol below 300 mg per day can be accomplished by being aware of other sources of cholesterol through out the day, one large egg contains about 215 mg.
