More than just a Scrambled Egg

For breakfast, lunch, or dinner you cannot beat the taste of scrambled eggs dressed up in a variety of ways and served as a starter for the day or a meal to end the day.  A perfect meal anytime of the day, and great as a meatless meal.  

Eggs cook fast, so timing is important when cooking eggs with other items.  It is practice that makes scrambling eggs an art form.  If you cook too fast on too high of heat the eggs dry out quickly and can scorch.  

It is best to have all items prepared before starting to cook the eggs.  Measure and dice so when those eggs are mixed and put into the pan you can add you other ingredients when needed.  The veggies can be cooked first if softness is desire.  

Since the eggs are a good source of protein themselves, eating other meat is an option.  Eggs provide a very balanced meal and are a very versatile food source with other staples in the food chain.  The following menu is just one that dresses up scrambled eggs and satisfies hunger at a moments notice. 


Cream Cheese Scrambled Eggs

Heat frying pan on low heat , add enough olive oil to thinly coat bottom of pan,
add 4 beaten eggs,  
2 slices cooked and crumbled bacon
¼ cup diced green  bell
¼ cup  diced red bell pepper
1 Tablespoon diced green pepper
Dash salt and pepper
Dash Tabasco Sauce
Cook egg mixture until moisture is almost gone, then fold in half and place in a casserole dish.

Mix together
¼ c. shredded Cheddar cheese
¼ cup softened cream cheese
¼ cup sour cream
Spread over egg mixture and bake at 350 degrees in oven till Cheddar cheese melts.  Serve with cooked blueberries or strawberries spooned over the finished eggs and a serving of toast.  Serves two.

Scrambled eggs provide a low calorie count  of just over 100 calories , low fat protein of over 6 grams , vitamins and minerals and it is all in just one egg.  Though the egg yolk is high in cholesterol the American Heart Association recommends that keeping cholesterol below 300 mg per day can be accomplished by being aware of other sources of cholesterol through out the day, one large egg contains about 215 mg.

For a balanced healthy diet, scrambled egg would be a good choice.  Experiment with scrambled eggs by pairing them with some favorite add-ins like spinach,  green onions, or delicious French toast.
